Raw Rainbow Salad

The best way to select your foods on a plate, for a good nutritional combination, is to seek out a range of colours. This lunch salad packs a wellbeing punch being full of anti-oxidants (Kale), rich in nutrients (gojis), minerals vit B & E (almonds) and great for lowering cholesterol and anti-cancer fighting properties (cabbage, almonds).

  • 10 – 12 Kale Leaves finely chopped
  • 2 carrots grated
  • 1/8 red cabbage and 1/8 white cabbage
  • 2 tbsp of goji berries
  • 4 lemon wedges
  • Handful of Activated Almonds

Dressing – mix all ingredients together with a folk

  • 4tbsp tahini
  • Juice of 1 lemon
  • 2tbsp olive oil
  • 2tbsp of water
  • 1tsp spirulina (optional)

Serves 4 – GF, Vegan, Vego

Preparation: to serve mix salad ingredients and pour over dressing then work through in a loving way with your hands. Truly delicious trust me!
