Need some good fuel to power through the big work days?

Got a series of big work days coming up? Here’s a killer breakfast or mid-morning snack idea from our Wholefoods Chef & Trainer, Ben Horne who says “bananas are an amazing source of potassium which is linked to lowering blood pressure & maintaining a healthy heart”. He also says, ” The macadamia oil helps to lower triglyceride levels also improving heart health, boosting energy levels and improving your digestion”. He goes on to say, “coconut flour is high in protein, fibre and healthy fats, is gluten free, low in sugar and has a low glycemic index score”.

Here Ben shares his seriously tasty version of a banana bread that is a firm favourite with clients on our workshop days.

Coconut Banana Bread

Ingredients
  • 800gm ripe Bananas + 2 for the top (garnish)
  • 12 Eggs
  • 8 Dates
  • 2 teaspoon Vanilla
  • 120ml Macadamia Oil
  • 1 Teaspoon Cinnamon
  • 4 teaspoons G.F. Baking Powder
  • 20ml Apple cider vinegar
  • 140gm Coconut Flour
  • 40 gm Chia Seeds. + 1 tablespoon for top (garnish)

Method

Blend all ingredients except Coconut flour and Chia seeds. Once well
combined add chia and coconut flour, mix well and rest for 10 mins.
Line baking tin with baking paper and pour in batter (it should be porridge like in texture). Slice extra bananas and arrange neatly on top, sprinkle chia seeds over and bake 150 degrees for 50-55 minutes rotating every 20 mins.
NB: if the top is colouring too quickly (deep brown colour), drop temperature to 140 degrees without any fan assist on your oven.
